Little Peach & Quiet

This cocktail is something that I’ve been slowly fine tuning over the course of the past few summers. After several tweaks and changes, I do think that I finally have it right.

It started with a trip to the farmer’s market about 5 summers ago. I was working at this little cocktail and brick oven pizza bar off the square. The bar manager bought some fresh summer peaches and brought them back to play around with. He ended up with this delicious puree and we ended up combining it with bourbon, lemon juice, and sugar to make a sour. It was good but something was off. It could be better.

Though that was the variation that he ultimately put on the menu, I decided to pursue improving the drink myself. With it slightly on the back burner, I decided to slowly tweak the drink by adding or changing something every time I made it.

I switched from a standard Four Roses to an oakier bourbon. Next, I added Mexican vanilla extract, dry curaçao and Lazzaroni amaretto to deepen the flavor. Then, I changed the sugar used to sweeten the puree to brown sugar. Next up, I switched from a puree to a peach syrup to address a viscosity issue that I had with the drink. Unfortunately, this meant that I lost a little bit of the peachy flavor. To correct this, I added peach bitters which boosted the flavor and kept the sweetness in check. Finally, I wanted a bit more body or feel to the drink, so I went ahead and added something that EVERY good sour needs: an egg white.

Though this drink now looks nothing like the original, aside from it having bourbon and peaches, I think that it’s FINALLY perfect. Don’t believe me? First of all, rude, but make one for your self. After all, couldn’t we all do for a little peach and quiet?

Little Peach & Quiet

Ingredients

  • 1 oz Buffalo Trace

  • .5 oz Lazzaroni Amaretto

  • .5 oz Ferrand Pierre Dry Curacao

  • 1.5 Peach & Vanilla syrup

  • 1 oz Lemon Juice

  • 2 dashes Fee Brother’s Peach Bitters

  • 1/2 egg white

Instructions

  1. Combine all ingredients into a cocktail shaker with no ice

  2. Dry shake the cocktail for 8-10 seconds

  3. Add ice to the shaker and shake for an additional 5-10 seconds

  4. Double strain into a chilled coupe glass or into a rocks glass with a large ice cube.

  5. Garnish with either an am amarena cherry or a couple slices of peach

  6. Enjoy!
